♣ Traditional Portuguese recipes combine a mix
of flavours and techniques of many other cultures
dating from centuries ago. Portugal’s recipes give
an overview of old cultural influences throughout the
centuries. They use ingredients common from the
Mediterranean countries and those essential to
Portuguese cuisine including olive oil, onions,
bay leaves, garlic, fresh coriander, paprika,
chili peppers and red sweet peppers. However,
the way in which the ingredients are mixed makes
Portuguese fare unique.
